This is a documentation of the food my family prepares at home. Blacked out images simply mean I have yet to take a photo of the dish. I invite you to try out the recipes. Most of them are super easy to prepare. We don’t really like complicated.
What’s for Lunch?
Sometimes a simple ham and egg sandwich will suffice. Egg cooked sunny side up.
Broiled Parmesan Tilapia
Broiled tilapia fillets in a creamy cheese sauce. Serve with steamed rice and vegetables.
Moroccan-Style Tilapia
I love the earthy flavor of this dish paired with the freshness of the mango salsa. It is a light, healthy option when you want a break from eating red meat.
What’s for Lunch?
Sliced cucumbers with cream cheese and mint leaves on pumpernickel bread. Seasoned with salt and pepper.
Portobello Mushroom Burger
Grilled portobello mushrooms marinated in balsamic vinaigrette. Combine with roasted bell pepper, avocado, and goat cheese for a hearty sandwich.
Fried Tofu
Here’s a quick and easy recipe – perfect for vegetarians! For those skeptical about tofu, give it a try, you might be surprised!
What’s for Breakfast?
French Vanilla yogurt with granola, strawberries, and a drizzle of honey.
Vietnamese Spring Rolls
My friend Lar taught me how to make these Vietnamese spring rolls. Super yummy and healthy. Made with either shrimp or roasted chicken and crushed pork rinds.
Chicken Nuggets, Italian Style
This chicken nuggets are made from chicken tenders and served with a garlic-balsamic dipping sauce.
Vietnamese Pho Party
Pho is a great comfort food, especially in cold winter months. You can easily prepare it at home. It’s also a great get-together dish, with each person building his or her own soup.
Peanut Butter and Banana Wrap
Here’s my version of a kicked-up PB&J sandwich. It’s great for an afternoon snack or for lunch, served with fruits or vegetables. It only takes a few minutes to prepare – perfect for busy schedules.
Banana Pudding
This is actually the recipe for Magnolia Bakery’s famous banana pudding. I have never seen anyone not like this banana pudding. Even my cousin who hates eating fruit desserts love this!
Pork Milanese
This breaded porkchops with two kinds of cheese is quick and easy to make. We eat this Italian dish two ways – in a sandwich (American style) or with steamed rice and vegetables (Asian style).
Kung Fu Panda Soup
This noodle soup, shared by my friend Rhea and reminiscent of the soup Mr. Ping makes in Kung Fu Panda, is made from store-bought rotisserie chicken and only takes a few minutes to prepare.
Chocolate Crinkles
It’s been a tradition in my house to bake these chocolate crinkles every Christmas to give as gifts to family and friends. Of course, we always bake extra to keep for ourselves!
